Sesame oil, especially roasted or toasted one, is full of flavor. It’s very satisfying when mixed with noodles and slurp in a good amount of noodles. Crunchy and refreshing cucumber and carrots not only deliver a different texture, but also negate a bit of guiltiness from the heavy sauce and oil.

The mixture sauce consists of:

  • sesame oil or sesame sauce

    I believe peanut butter might be a good alternative, although it would become a different dish.

  • thick or thickened soy sauce, as known as Yinyóu (陰油 or 醬油膏)

    It’s a variety of soy sauce but much thicker. For a dish like this, you would want to have heavy sauce. Nonetheless, regular soy sauce is fine.

  • (vegetarian) oyster sauce

  • chili powder or flakes

  • extra powder of onion, garlic, and green onion

Other ingredients for topping:

  • cucumber, julienned

  • carrot, julienned

  • onion, thin sliced, fried to crispy

  • green onion or scallion, sliced

  • any pickles float your boat (bowl)

    I put in sauerkraut. You would want some different flavor to add to the dish. Something vinegary would work well and lift the flavor more.

Method to make the dish:

  • place cooked noodles into a bowl

    The bowl should be much bigger. Mine was just for photo, I actually transfered to a bigger bowl for eating.

  • top noodles with mixture and ingredients

    Save some for topping for the color, but it’s unnecessary because this isn’t a dish for good looking.

  • combine well

  • enjoy the satisfaction

Normally, I wouldn’t go through so much trouble to cut those vegetables, definitely not frying sliced onion. Just mixing the sauce while cooking the noodles, then mix together with some pickles. Done. But the cucumber is really a nice together, I might still slice some next time I want to eat this.
